The third Advent-sunday is just around the corner, and therefore it’s finally time for some Christmas spirit! And what would be more suitable than baking delicious cookies?! Below you can find my all time favorites: Linzer Augen (short pastry filled with jam), Kürbiskernkipferl (pumpkin seed crescents), Zitronen-Kokosbusserl (lemon coconut macaroon) and Marzipankugerl (marzipan bead). Enjoy!
Zitronen-Kokosbusserl4 egg white, 150g sugar, 65g curd, 200g shredded coconut, 5 tsp lemon juice Whip the egg whites together with the sugar, afterwards mix with the other ingredients. Drop the batter onto sheet pans and bake at 160 degrees for approx. 20 minutes.
Marzipankugerl500g marzipan, 350g powdered sugar, 20g rum; shredded coconut for rolling Mix all ingredients together and shape small beads. Roll the beads in grated coconut. You can easily modify this recipe by using different liquids or marmalades instead of rum. |

Linzer Augen200g butter, 2 egg yolk, 150g powdered sugar, 400g flour, 2 tsp baking powder; jam for filling Mix all ingredients together and let the dough rest for at least 2 hours in the fridge. Afterwards roll dough thin and cut out cookies. Bake at 180 degrees for approx. 10 minutes. After cooling, spread one cookie with jam and put a second one on top. |
Kürbiskernkipferl200g butter, 2 egg yolk, 100g powdered sugar, 250g flour, 200g grated pumpkin seeds, 1cl pumpkin seed oil, 8g vanillin; dark chocolate for decoration Mix all ingredients together and let the dough rest for at least 2 hours in the fridge. Afterwards shape small crescents, and bake at 180 degrees for approx. 12 minutes. After cooling, melt the dark chocolate and decorate the crescents. |
